Maso nakr\u00e1jejte na v\u011bt\u0161\u00ed kostky, p\u0159ibli\u017en\u011b 4\u20135 cm. Cibuli do marin\u00e1dy nakr\u00e1jejte nahrubo, 2 mrkve na v\u011bt\u0161\u00ed kusy, \u0159ap\u00edkat\u00fd celer na pl\u00e1tky a \u010desnek jen lehce rozm\u00e1\u010dkn\u011bte.<\/li>\n\n\n\n<li>Maso dejte do m\u00edsy nebo n\u00e1doby s v\u00edkem. P\u0159idejte cibuli, mrkev, celer, \u010desnek, pomeran\u010dovou k\u016fru, tymi\u00e1n, bobkov\u00fd list, petr\u017eelku, kuli\u010dky pep\u0159e a h\u0159eb\u00ed\u010dek. P\u0159ilijte \u010derven\u00e9 v\u00edno a vinn\u00fd ocet. Maso by m\u011blo b\u00fdt pokud mo\u017eno pono\u0159en\u00e9. P\u0159ikryjte a nechte v lednici marinovat ide\u00e1ln\u011b do druh\u00e9ho dne, nejl\u00e9pe 12\u201324 hodin.<\/li>\n\n\n\n<li>V den va\u0159en\u00ed maso vyjm\u011bte z marin\u00e1dy a dob\u0159e osu\u0161te. Marin\u00e1du sce\u010fte, ale tekutinu i zeleninu z marin\u00e1dy si ponechte zvl\u00e1\u0161\u0165. Bylinky, bobkov\u00fd list a pomeran\u010dovou k\u016fru tak\u00e9 nevyhazujte.<\/li>\n\n\n\n<li>Teprve te\u010f p\u0159ipravte suroviny na du\u0161en\u00ed. Slaninu nebo pancettu nakr\u00e1jejte na kosti\u010dky, \u010derstvou cibuli nakr\u00e1jejte nadrobno a 3 \u010derstv\u00e9 mrkve nakr\u00e1jejte na siln\u011bj\u0161\u00ed kole\u010dka nebo \u0161ikm\u00e9 \u0161pal\u00edky.<\/li>\n\n\n\n<li>V litinov\u00e9m nebo jin\u00e9m silnost\u011bnn\u00e9m hrnci rozeh\u0159ejte olivov\u00fd olej. P\u0159idejte slaninu nebo pancettu a kr\u00e1tce ji ope\u010dte, aby pustila tuk a lehce zezl\u00e1tla.<\/li>\n\n\n\n<li>P\u0159idejte osu\u0161en\u00e9 maso a ope\u010dte ho ze v\u0161ech stran dohn\u011bda. D\u011blejte to rad\u011bji po d\u00e1vk\u00e1ch, aby se maso neza\u010dalo dusit m\u00edsto op\u00e9k\u00e1n\u00ed.<\/li>\n\n\n\n<li>Do hrnce p\u0159idejte \u010derstv\u011b nakr\u00e1jenou cibuli a scezenou zeleninu z marin\u00e1dy. Op\u00e9kejte asi 5 minut, a\u017e cibule zesklovat\u00ed a zelenina se lehce orestuje.<\/li>\n\n\n\n<li>Vm\u00edchejte raj\u010datov\u00fd protlak a kr\u00e1tce ho zarestujte. Potom v\u0161e zapra\u0161te moukou, dob\u0159e prom\u00edchejte a nechte asi 1\u20132 minuty zlehka op\u00e9ct.<\/li>\n\n\n\n<li>P\u0159ilijte scezenou vinnou marin\u00e1du a ode dna od\u0161kr\u00e1bn\u011bte v\u00fdpek. Vra\u0165te do hrnce tymi\u00e1n, bobkov\u00fd list, petr\u017eelku a pomeran\u010dovou k\u016fru z marin\u00e1dy. Podle pot\u0159eby dolijte v\u00fdvar nebo vodu tak, aby bylo maso t\u00e9m\u011b\u0159 pono\u0159en\u00e9.<\/li>\n\n\n\n<li>Osolte opatrn\u011b, proto\u017ee slanina a olivy je\u0161t\u011b chu\u0165 zes\u00edl\u00ed. P\u0159iklopte a duste velmi zvolna na plotn\u011b celkem 3,5\u20134,5 hodiny, nebo p\u0159edeh\u0159ejte troubu na 160 \u00b0C horkovzduch, vlo\u017ete p\u0159iklopen\u00fd hrnec do trouby a duste celkem 4\u20135 hodin. Do t\u00e9to celkov\u00e9 doby du\u0161en\u00ed se po\u010d\u00edt\u00e1 i pozd\u011bj\u0161\u00ed p\u0159id\u00e1n\u00ed \u010derstv\u00e9 mrkve a oliv. Maso m\u00e1 b\u00fdt na konci \u00fapln\u011b m\u011bkk\u00e9 a om\u00e1\u010dka tmav\u00e1 a v\u00fdrazn\u00e1.<\/li>\n\n\n\n<li>Asi po 2 hodin\u00e1ch du\u0161en\u00ed p\u0159idejte \u010derstvou mrkev nakr\u00e1jenou v den p\u0159\u00edpravy. D\u00edky tomu se zelenina z marin\u00e1dy \u010d\u00e1ste\u010dn\u011b rozva\u0159\u00ed do om\u00e1\u010dky, ale \u010derstv\u00e1 mrkev z\u016fstane v hotov\u00e9m j\u00eddle p\u011bkn\u011b viditeln\u00e1.<\/li>\n\n\n\n<li>Asi 30\u201345 minut p\u0159ed koncem p\u0159idejte \u010dern\u00e9 olivy. Pokra\u010dujte v du\u0161en\u00ed, dokud maso nen\u00ed \u00fapln\u011b m\u011bkk\u00e9.<\/li>\n\n\n\n<li>Na konci vyjm\u011bte bobkov\u00fd list, v\u011btvi\u010dky bylinek a pomeran\u010dovou k\u016fru. Om\u00e1\u010dku dochu\u0165te sol\u00ed a \u010derstv\u011b mlet\u00fdm pep\u0159em. Pokud je p\u0159\u00edli\u0161 \u0159\u00eddk\u00e1, nechte ji kr\u00e1tce probublat bez poklice.
